So I interviewed the extremely friendly Karen Nunley, owner and founder of Holy Donuts, who was kind enough to give both Kat (the photographer) and I two delicious donuts.  I tried one of her latest creations, a spin of Hostess' Ho-Hos (I think that's what they're called), with real marshmallow filling (though probably not the actual marshmallow root). I also ate a "donut hole," which aren't actually holes because Karen handcuts them. Hence, they're called "Itty-bites." 

Now, after trying her vegan creations for the first time, I crave one everyday. Luckily, she'll be opening her bakery to the public in late May. Even luckier, it's in downtown Eugene just a few blocks from where I live! I'll definitely be stopping in more often than I should. Thanks, Karen!
